Mulled wine with rum recipe for sitting by the fireplace

Today I’m sharing with you my recipe for mulled wine with spiced rum for a cosy night in! Intrigued by the idea for adding rum? December is usually a time when we gather with friends and neighbours at the local Christmas market. We all take turns to buying each other rounds to keep warm in the cold huddled around tall and tippy tables or walking between booths. But why should you have to leave home to enjoy this wintery delight?! Skip the markets and just make it at home so you can sit with a blanket by the fireplace!

I’m giving you a version which in France is called “Vin Chaud Flambé” which means it has rum in it. While I always drank it this way, even in Canada, it does remind me of the Christmas market in Strasbourg and one stand which had dubbed it the “torche de noel” which I quite liked. I figure given the circumstances of the last few years, a little dose of rum might be well called for.

What’s more, it really fills your home with the delicious scent of baking spices and wine, a big win in my books and what more could you want around the holidays!? When I’m picking a wine I will always go with a French red from the south of France. Sun brings ripe fruit flavours to wine and this goes a long way for mulled wine. Great values can be found in the Rhone Valley as well as Languedoc-Roussillon. I don’t like to spend a fortune, but I still need to enjoy the wine. Adding a spiced rum kicks it up a notch but sip slowly. You’ve been warned.

I like to serve it in my favourite handmade handless mugs, there’s something about handmade ceramics, maybe it’s a little more rustic but it’s a season for cosiness so go all in!

Mulled Wine with Rum

C THIBLET
Add a little kick to an old classic with some spiced rum

Ingredients
  

  • 2 clementines
  • 12 cloves
  • 3 pods cardamom
  • 5 whole allspice
  • 2-3 tbsp brown or cane sugar *
  • 4 shots spiced rum
  • 1 bottle fruity red wine 750 ml

Instructions
 

  • Quarter your clementines and pierce them with the 12 cloves and add to a medium-sized saucepan.
  • Open up the cardamom pods and place in a tea infuser ball with the allspice if you have one or throw them directly into the pot followed by 2 sticks of cinnamon and the sugar and pour your bottle of wine over top.
    *Pick a wine that's not too expensive but that you'd still happily drink because bad wine is still bad wine even with spices. I generally recommend a young wine with ripe fruit flavours (think hot climate regions like the Rhone Valley or the Languedoc) I try to avoid anything too tannic or dry because you will have to add more sugar to compensate
  • Place the pot on a medium-low heat so it won't boil and just take your time and check after about a half-hour to see how the infusion is going. Once it's to your liking, remove the cinnamon sticks so it doesn't become too astringent with time and add your rum and squeeze the clementines just before serving. For those who prefer a lower alcohol content, you can easily put just two shots of rum in if it's more to your liking or omit it altogether!
  • Pour into your favourite mugs and enjoy!

Notes

*this recipe is a little less sweet, more in keeping with French-style but, of course, you can always add a little more to taste if it’s to your liking.
